Driving through Napa Valley before harvest season is unforgettable. Rolling hills, golden vines, and world-famous wines make this region shine. But behind the beauty, locals face big challenges. Years of drought and major wildfires have forced residents to rethink how they use water.

Co-founder Jordan Kivelstadt says the company uses about 5,000 gallons of water a day to clean the kegs. Their on-site treatment system reuses 99% of that rinse water. “We estimate we’re saving about a million and a half gallons of water a year thanks to our recovery system,” says Kivelstadt. The system cost about half a million dollars to install but should pay for itself in less than three years.
At UC Davis, the viticulture and oenology department plans to follow the same approach. Chairman David Block notes that most California wineries use between 2.5 and 6 gallons of water to make each gallon of wine—excluding irrigation. These new systems help wineries save water and protect California’s limited supply.
Water conservation isn’t just for wineries, it’s a shared effort across the community. Allison Jordan, VP of Environmental Affairs for the Wine Institute, says more than half of California wineries already reuse some wastewater for vineyards or landscaping.
The City of Napa is also committed to saving water. Its long-term plan aims to reduce water use to under 132 gallons per person each day. To help residents reach that goal, the city offers rebates, free classes, and training focused on every water wise landscape option—from drought-tolerant plants to artificial turf that needs no watering at all.
